Whats Cooking Wednesday 6/30

Oven Baked Sweet Potato Fries
Ingredients:
1 – 1 1/2 lb sweet potatoes
1/4 cup olive oil
1/2 tsp kosher salt
1/2 tsp paprika
1/4 tsp cinnamon

Directions: 
Preheat oven to 425 degrees. Line a baking sheet with aluminum foil (preferably the easy release kind).
Peal the sweet potatoes. Cut into strips that are about 1/2 inch wide on each side.
Place the sweet potatoes into a resealable plastic bag. Add oil, salt, paprika and cinnamon. Seal the bag and shake well to thoroughly coat the fries. Spread the potatoes out onto the baking sheet in a single layer.
Cook for 30 minutes, turning every 10 minutes, until slightly browned. Transfer immediately to a paper towel lined plate and serve warm.

Let me just say yummy yummy yummy! These were fantastic. My husband who is not a big sweet potato eater loved them. I love sweet potatoes just about any way you can cook them but this is the first time I tried them as fries. I served them for dinner with grilled asparagus and cheese burgers. (Note I ate my burger with no bread, added a little BBQ sauce and a tomato slice) I warmed the left over fries in the microwave for lunch the next day with tuna salad and they were still delicious!

Mamavation Week Fourteen

Watch Lives Change

I have been busy busy busy this week! The boys and I have walked 4 out of six days. I will be posting my Mamavation posts on Sunday from now on so my progress with always be from Monday to Sunday! Yesterday the boys and I went and walked around the swap meet and then after dinner we went to the park. I was so estatic when I looked at my steps from yesterday! My total was whopping 14536!!! I also consumed more than 100 ounces of water! I am going to start posting my water consumption and my steps in a weekly update starting next week (I need a week to update) 


Sunday (today) Steps and Water (will be updated throughout the day):

  • Water= 100 ounces
I have ate very well this week and only failed once on my food choices. I took the boys to Hardees for breakfast yesterday because I was running late and Aaron wanted a blueberry biscuit. I ended up eating half a blueberry biscuit and one gravy biscuit. On Sunday's we always go to Cracker Barrel and I actually chose well. Instead of the butter laden pancakes or french toast I opted for a Vanilla yogurt parfait with blueberries and strawberries topped with a cranberry raisin granola and half a blueberry muffin (my boys both ate the other half happily!)

I am onto day Four of NO wine at night per Leah's butt chewing ;) It is not easy but at the same time not to hard. I only ever had one small glass and so I think it will be okay. Now I will be honest New Orleans will be a difficult task for me; Kim suggests I slip Leah a few first and so she will never know if I drink. (hahaha)
Today I also tried out a new cardio workout thanks to CJ. I will be honest it is 10 minutes and it kicked my bootie BUT I did it and did not stop. My problem is I have HUGE tattas, you know my chest, and it hurts to do any kind of jumping etc. I wear a sports bra over top of my bra and I still end up in so much pain. If any of you have any ideas to help me please let me know.

Personalized Finger Print Bug Flower Pots: Great Gifts

So this year was Aaron's first year in school. He went full time to Headstart and will be going again this year. I wanted to do something really great for the 3 office staff and his two teachers. That being said I did not want to waste my money on the same old things all teachers get. It was time to put on my thinking cap: This is what resulted:
Each one of the five ladies received a hand painted pot, a pack of flower seeds, a gallon bag of potting soil, and a bookmark that had a picture of them with Aaron. This was a very affordable option: Pots were $1.00 =$5.00, Seeds were $0.50 = $2.50, Soil was $3.00, Spray paint was 2 cans and totaled $4.00, and the bookmarks I did on Microsoft publisher and had lamented at Staples = $1.00. So my total cost was $15.50 for 5 teachers. Please note I used latex paint I already had a home; but this would add about $10 if you had to purchase several paints.



Need: 
Terra Cota Pots
Latex Paints in several colors
Paint Brushes
Sharpie Markers
Seed Packets
Soil 
Zip Lock Bags to put soil in
White Spray Paint (I used Flat)
Krylon Clear Outdoor Spray Paint (I used Satin)
    STEP ONE~
    Spray paint all Tera Cotta Pots with the white spray paint. Let sit and re cover. I did not mind the unfinished look as once soil is put into the pot you will not know it is not finished. I let the pots sit over night to make sure the paint was thoroughly dried.

    STEP TWO~ 








    Chose several colors to work with. I knew we would have bumble bees = yellow , lady bugs = red, butterfly's = purple, dragon flies = purple, and flowers = orange. I placed paint on a paper plate and had Aaron stick his fingers in the paint and then press onto the pot. We did this for all five pots. I did find doing all yellow then all red, etc before moving on to the next color made this process much smoother. Make sure you stagger colors so you can see all the little critters around the pot. Let finger prints dry over night.



    STEP THREE~
    Take your sharpie and do all your lady bugs. Draw a 'Y' shape on top and connect the tail with a upside down 'Y' for your wings. Place black dots on the wings for the lady bugs spots. Play with it, have your lady bugs facing different directions and even upside down! The lady bug is the easiest because you can easily free hand it and there is no paint on the bodies involved.


    STEP FOUR~
     Take your sharpie and write on the top band of the pot. I wrote: 'Thanks for helping me grow! Aaron 2010' I tried to write it in script that is much the same as basic printing. After all this is a child's project. If you have elementary school aged kids this is a great project to allow them to do.

     STEP FIVE~
    Pencil in your bodies on bumble bees, butterfly's, and dragon flies. Also pencil in your petals on your flowers; using the pencil allows you to correct mistakes as you go. Make different petals and wings on your bees~ Variety will make this pot come to life. Trace over your pencil marks with a black sharpie to give the defined look on your bugs. You have now completed your lady bugs and bees. Note all the bees need are their heads, wings, and stripes.

    STEP SIX~
    Take different color latex paints and paint int your butterfly's, dragon flies, and flowers. Alternate colors and add details like dots and strips to butterfly's as you go. Allow latex paint to dry for 24 hours and keep away from ANY type of moisture.

    STEP SIX~

    Coat each pot with your clear Krylon paint to allow them to be weather and water proofed. I coated each pot several times to make sure it was nicely covered. This one can will coat ALOT as the pot already is painted so will not soak the clear coat. Make sure to let this dry overnight.

    At this point you can either fill with flowers and soil and give as gift or you can do as I did and give each component separately. Aaron wanted to plant already bloomed flowers but that adds to the cost. Here again is the finished project. Aaron was so proud to hand these out on the last day of school and each of the ladies commented how this was the best gift they had ever received from a student.

    I love these! I could not be more pleased and although time consuming they were so simple to make! Please let me know your thoughts!

    Summer Time = "I'm Bored"

    School is out and children are so excited that summer is here, but it won't be long until you hear the infamous, "I'm bored" from your little ones.

    Primrose Schools, the leader in educational child care, recommends encouraging imaginative play and having a plan in place to keep children's minds engaged during the summer months. Studies show that without stimulation, children can lose up to 60 percent of what they learned during the school year.

    That's why Dr. Mary Zurn, Vice President of Education for Primrose, has come up with the list of ideas below as a starting point for summer activities that offer a balance between the freedom of child-initiated play time and more structured activities.



    Here are 11 ideas parents can use to keep young minds active during the summer months:

    1.       Boredom Buster Jar: At the beginning of the summer, sit down with your family and brainstorm a list of activities that can be done alone or that you can enjoy doing together. Encourage your children to share their own ideas and help you decorate and label a simple jar as the family "Boredom Buster Jar."  They'll feel more involved in the project and more likely to think this is a "neat" idea, if they participate in the creation and idea generation. Next, write everyone's ideas down on slips of paper and as a group decide which ones should go in the jar. Anyone in the family can pull any idea out of the jar to fight the summertime boredom blues.

    2.       Stories Alive: It sounds too simple, but reading is one of the most important waysto keep young minds engaged during the summer.Make reading even more fun by finding ways to bring the stories to life. For example, in the book Roxaboxen by Alice McLerran, children create a make-believe town in the desert out of rocks, boxes, and their imaginations. Read the book with your children and then challenge them to create their own town with materials they find in the backyard.

    3.       Art Start Box: You'll need to gather basic art supplies-child safe scissors, glue, markers, tape and construction paper. Put them in a special box along with empty oatmeal boxes and paper towel rolls, colorful magazines and bits of aluminum foil. Occasionally add a special surprise like chalk, stickers, or stamp pads so there's always something new for the children to find. Even if you normally have these supplies around the house, it's fun for children to know that the Art Start Box is just for them. They'll probably have some good ideas of other household items that can be recycled to fuel their creative energies.

    4.       Family Performances: Break out old clothes or costumes and encourage children to make up characters and create a play to act out.  They are the directors, actors, and producers.  They can also make musical instruments out of pots/pans, wooden spoons, empty canisters and have a parade; or everyone can play along to your family's favorite songs. Record or video the performances, and enjoy the replay.  You'll also be capturing a bit of family history everyone will enjoy for years to come.

    5.       Family Dance Party: Crank up the music and encourage your entire family to boogie down. Dancing gives children a great outlet for self-expression through their own motion and helps build self-esteem. It also enhances motor and coordination development by incorporating skills like jumping, landing and leaping.  Dancing is a great activity that can involve the whole family and doesn't take very much preparation.

    6.       Fort Building: Children love to build all kinds of structures--from small towns to large towers. Constructing forts or tents is an activity that can keep children focused and problem solving for hours. All the items you need can be found around the house- some chairs, cushions, blankets, and of course adult supervision.

    7.       Cookbook Fun: Have you ever shared your favorite cookbook with your children?  Take it out and ask your children to choose a recipe to try. Measuring can be a fun and easy way to keep math skills fresh.

    8.       Summer Scrapbook: All you need for this project is a spiral notebook. Encourage everyone in the family to draw pictures of favorite activities and collect mementos from special events throughout the summer.   Children love to go back through scrapbooks and albums and tell about what happened at each occasion.  They will also be building their storytelling skills at the same time.

    9.       Listening Game: Lie down in the backyard, in the den or at the park and listen.  What do you hear? Do you hear what I hear? Can you imitate the sound? This is similar to watching the clouds and naming the shapes, and it encourages everyone to slow down and focus on listening.

    10.    Camping Out: Pretend to campout in the backyard. Plan a meal, pack a backpack and set up a campsite.  You might even decide to spend the night!

    11.    Scavenger Hunt: Make a list or picture cards of common household items and have your children find the items on the list. Invite friends or neighbors to join in the fun to make it a competition.

    Be Safe this Summer!

    The summer picnic season is upon us, and one of the biggest weekends of the summer is almost here!  With the Fourth of July right around the corner, it's time to plan now for a safe and sober way home.
     
    While many of us focus on fireworks safety each Fourth of July, we also need to keep our roads safe for the drive home after the festivities. 
     
    Whether at a family picnic or viewing the local fireworks display, many of us will be on the road this Independence Day.  It's time to spread the word about the dangers of buzzed driving and to remind people that Buzzed Driving IS Drunk Driving, and the best way to stay safe is to plan ahead.
     
     
    There are four steps you should take to protect your loved ones on the Fourth of July.   
     
    1.) Designate a sober driver before you leave for your Fourth of July events. 
     
    2.) Be ready to take alternate transportation such as a bus or taxi.
     
    3.) Have the phone number of a taxi service stored in your phone before you leave for the party.
     
    4.) Call 9-1-1 if you see an impaired driver on the road.
     
    Even if you will not be drinking alcoholic beverages this Fourth of July, keep in mind that over the course of 2008, 1,179 people in other vehicles were killed in crashes involving alcohol-impaired drivers.  And there were a total of 491 motor vehicle traffic fatalities during the Fourth of July Holiday period (Thursday, July 3rd, 6 pm to Monday, July 7th, 5:59 am).  And for those who say they don't plan on over-indulging . . . a buzzed driving crash looks the same as a drunk driving crash.
     
    We are working with the National Highway Traffic Safety Administration (NHTSA) and the Ad Council as they continue their efforts with the "Buzzed Driving is Drunk Driving" PSA campaign. Buzzed drivers drink and drive, but do not consider themselves a hazard on the roadway because they have had "only a few" drinks.  


    Remember: Buzzed Driving IS Drunk Driving. Plan ahead and ask your loved ones to do the same.

I also learned that almond milk has as much calcium and vitamin d as regular milk, but is naturally fat and cholesterol free.Wait it gets better Almond Milk is Soy, Lactose Free, and is great for a Vegan diet!



    We got to try both varieties of Silk's new Almond Milk. I was pleasantly surprised. I will say the Vanilla was to sweet to be used in cereal or anything that was already a little sweet. I did really enjoy the Vanilla flavor in coffee and did not need to add sugar or creamer when using it!

    I loved using the original in place of milk in many recipes and even enjoyed just drinking it!
    You can find great tasting recipes to try on Silks website. I think I am going to make the Almond Crunch Oatmeal for breakfast tomorrow! You can find Silk Pure Almond Milk in just about any grocery store and it retails for $3.99 a half gallon.
